Passing the central Phoenix location during evening dog walks, we always swore that we would get there, but just never made it a priority. Then mix 100% Liquid Egg-Whites (2.5 oz per cup) with your preferred spices (I like basil, onion powder, garlic powder, black pepper and crushed rock salt). Next toss in 1.5 oz of chopped tomatoes and a sprinkling of Hatch, New Mexico green chili or anything else you want to add some heat.&lt;br /&gt;&lt;br /&gt;Now here's where it gets a bit risky for anyone trying to follow a protocol that does not allow for proteins to be mixed in the same meal. We took 2 strips of extra-lean Jenny-o Turkey Bacon and microwaved them for 1 minute at a time (a total of 3 minutes). Surprisingly they come out crunchy after you pat them off and let them sit a bit. Crunch those up into bacon bits and add them into the mixture. I found that one strip is enough for two muffin cups so I saved the second strip to enjoy on the side.&lt;br /&gt;&lt;br /&gt;Bake at 350 degrees for 20-25 minutes and each muffin frittata comes out crispy and tasting seriously sinful. I added some &lt;a href="http://bit.ly/dMbkDY"&gt;Macayo sauce&lt;/a&gt; because I love to kick up the spice an extra notch but that is entirely optional. In fact, many of them encourage eating out - Foursquare, Foodspotting, etc.  So during P3 and P4 my Mayorships at most of our usual haunts are pretty secure since we don't eat at home as much as we do in P2.&lt;br /&gt;&lt;br /&gt;Yesterday we decided to brunch at home so I whipped up a delish spinach and goat cheese omelet (two full eggs and 1 oz of egg whites to cut down on fat and cholesterol) and paired it with a mixed greens salad with dried cherries, sliced almonds and more goat cheese. I took chicken escalopes (found at Fresh and Easy) and pounded them down just a bit more even though they are already pretty thin.  &lt;br /&gt;&lt;br /&gt;Then I steamed 1.5 oz of spinach, separated it into four sections and placed it evenly on each one. We use the Fagé Greek yogurt that is 0% fat.&amp;nbsp; I layered the yogurt with raspberries, blueberries, strawberries and blackberries.&amp;nbsp; Then I chop up some nuts and then drizzle a little bit of honey on top.&lt;br /&gt;&lt;br /&gt;So delish!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Here's the recipe breakdown and nutritional facts:&lt;br /&gt;&lt;div class="separator" style="clear: both; Tonight we are at a dinner theater and faced with either not eating or taking chances. While I'm not usually a fan of buffets (too much unknown activity by strangers around my food) this evening "Joseph and the Amazing Technicolor Dreamcoat" at a local dinner theater motivated me to give it a go.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://www.reddirtreport.com/images/news/images/dreamcoat.jpg" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="320" src="http://www.reddirtreport.com/images/news/images/dreamcoat.jpg" width="233" /&gt;&lt;/a&gt;&lt;/div&gt;We checked out the menu online ahead of time and found that the protein options were going to be limited but figured we take our chances.  They had a mish-mash of options: oriental crispy chicken, salmon with some type of soy-based marinade, beef stew and roasted turkey.  For vegetarians (if that was really their intention) there was a sticky sort of cheese ravioli available. &lt;br /&gt;&lt;br /&gt;The salads were either iceberg lettuce and bits of shaved carrots or romaine with croutons and Parmesan cheese. I opted for the Romaine and picked around the croutons and cheese. &lt;br /&gt;&lt;br /&gt;Since the salmon was drenched in that soy glaze I checked out the turkey and was surprised to find a uniformed carver slicing to request a beautifully roasted turkey breast. Although I suspected that it was brined or roasted with butter and/or oil - it was the least of all evils. &lt;br /&gt;&lt;br /&gt;I had the carver lay the turkey on top of the Romaine and then topped it with some pepper and lemon juice to make a nice fresh salad! But today is different.  Today I am happy to report that through healthy living I have achieved a sub-goal that I've been carrying around for years.  The last time I was at the weight I am today was Sept. 11, 2001. Nor is it the celery, which some refer to as a "&lt;/span&gt;&lt;a href="http://www.snopes.com/food/ingredient/celery.asp"&gt;&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;negative calorie food&lt;/span&gt;&lt;/a&gt;&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;" (wish chocolate did that). &amp;nbsp;The challenge really lies in the sauce. &amp;nbsp;So many sauces are laden with sugars - or worse corn syrup and corn starch - so it's more than just oil or breading that knock these off the list.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt; text-align: left;"&gt;&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;I tossed them into a mixing bowl and grabbed some of Tony Chachere's Creole Seasoning.&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; Although it feels easier to know what we can and cannot have, and we've taken some liberties with this knowledge, it is important to note that it does seem a bit more difficult to keep my mind from wandering...&lt;/div&gt;&lt;div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"&gt;The first time we did Phase II, we did not eat out at all. &amp;nbsp;I prepared my lunch every day and never strayed. &amp;nbsp;This time around I find myself rarely preparing my lunch but instead grabbing an apple, eyeballing that it is about 5ounces - minus core - and then calculating it from there.&lt;/div&gt;&lt;div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"&gt;During our first run through Phase II I found most success when I stayed just slightly below the 500 calorie mark so overestimating certain items tends to work well to hit just below that mark. &amp;nbsp;So far I am losing a good amount this time around so I think this method is working and helping me to remain sane.&lt;/div&gt;&lt;div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"&gt;I am really looking forward to moving on to Phase III. &amp;nbsp;What Kelly and I discuss often is the change in our cravings. &amp;nbsp;We no longer crave that ooie, gooie pizza or fat-laden hamburgers but instead, a bowl of mixed olives, cheese, nuts...these are the things we long for. &amp;nbsp;That beautiful bowl of olives at Postino is calling my name and just a couple more weeks I will answer.&lt;/div&gt;&lt;div class="separator" style="clear: both; I hit a huge goal today...50lbs lost!!&lt;br /&gt;&lt;br /&gt;Sometimes I don't really believe it myself until I try on a shirt I haven't worn in a year or slip on those jeans that used to take the jaws of life to get out of (not to mention what it took to get into them). Since our diet is so limited this was going to pose quite a challenge. &amp;nbsp;How can I entertain without the usuals: delicious hors d'oeuvres, wine, decadent desserts?&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;We talked with our guests and made sure to clear the food selections with them first. On the menu:&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;i&gt;Filet&amp;nbsp;Mignon&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;i&gt;Steamed Spinach&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;i&gt;Israeli&amp;nbsp;Cous Cous &lt;/i&gt;(for our guests only)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;The preparation for the filets was a easy breezy - simple is always best; just a little cracked pepper and sea salt. Then onto the spinach! I needed to find a dessert that would satisfy even the sweetest tooth and stay within our budgeted amount of calories. Regular strawberries would just not cut it for guests so I decided to kick it up a notch and make my own&amp;nbsp;meringue with the an approved ingredient - egg whites! &amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;To begin, I tossed about 4oz of sliced strawberries for each guest in some chocolate Stevia and placed them in martini glasses. Then for the meringue, I measured two ounces of egg whites and added eight drops of regular liquid Stevia. Normally meringue calls for cream of tartar, however I left it out this time and instead decided to whip it...whip it good.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;I grabbed my whisk and went to town. WOW, talk about working out those biceps! Gym? Being that Melba Toast is the only "crunch" item on the list, we thought we would give it a go.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;The first step was easy:&lt;br /&gt;Two Melba toasts + fancy food chopper = instant bread crumbs&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;The next step would prove a little more challenging. How to make the bread crumbs "stick" to the chicken breast? &amp;nbsp;Egg yokes are a no-no and even though egg &lt;i&gt;whites&lt;/i&gt;&amp;nbsp;are approved, mixing proteins would either not be approved or, with the small amount that would be used, at best be a grey area that could effect weight loss.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Previously I used chicken stock to get spices to attach to the asparagus by basting it lightly. Using the same logic we decided to baste the breast in chicken stock, rolled it in the Melba crumbs and then baked it at 360&lt;span class="Apple-style-span" style="font-family: Symbol;"&gt;° &lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: inherit;"&gt;F.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;The results were crunchy and delicious! We have solved this challenge with the chicken breasts by weighing each chicken breast, putting it into an individual plastic bag and then taking a Sharpie to write the exact raw weight. When it comes to steak there just always seems to be a small piece left over.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Fillet being as expensive as it is there is no way I am going to toss that little bit out! So instead I weigh the remaining pieces, slice them up into bite-sized portions and then toss them on the grill along with the fillets for the night. Then for lunch the next day I add it to my spinach, toss on some lemon pepper and squeeze one half of a lemon and make myself a delicious spinach and steak salad!&lt;/div&gt;&lt;div class="separator" style="clear: both; It is strange, it started out as allergies, then a little congestion, then today it is pretty evident I have a cold.&amp;nbsp; I am going to continue on with the shots and the diet as planned and see how it goes over the next couple of days.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;I am basically treating this like any other cold - minus the Nyquil (which is loaded with sugar).&amp;nbsp; Tonight my beloved made me some homemade chicken and celery soup.&amp;nbsp; The broth did wonders for my congestion and now I'm coughing a bit but I know that just means it is clearing up.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Most people will agree on most comfort foods - mashed potatoes, meatloaf, green beans, etc.&amp;nbsp; What I am realizing is that comfort does not have to mean fattening.&amp;nbsp; Comfort should mean nutrition-filled.&amp;nbsp; The chicken soup I had tonight was probably the best I've ever had and it wasn't full of sodium or preservatives. &lt;/div&gt;&lt;div class="separator" style="clear: both; It seems that organization is the key to success with this process.&amp;nbsp; As I mentioned before, I do fell like Desmond from the Dharma Initiative - preparing shots, cutting chicken, and strawberries into pre-packaged portions, etc.&amp;nbsp; It is a good feeling to be organized.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;We purchased a spice rack and filled it with the primary spices we seem to be using.&lt;/div&gt;&lt;div class="separator" style="clear: both; With this new diet however, I am being exposed to quite a few new spices: Turmeric, Cumin, Marjoram. While they have all been included in meals I have enjoyed in the past - I have not really&lt;b&gt; cooked &lt;/b&gt;with them much.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;For dinner tonight I had a 4oz filet mignon and grilled asparagus.&amp;nbsp; To prepare the filet I only used salt and pepper. &amp;nbsp; From what I have found simple preparation is always better when dealing with&lt;i&gt; good &lt;/i&gt;cuts of beef.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;The asparagus posed a unique challenge as I typically toss them in some extra virgin olive oil and sprinkle on sea salt/kosher salt and ground pepper.&amp;nbsp; Since olive oil is not on the approved list, I rinsed the asparagus and then quickly added the spices.&amp;nbsp; Voila! It seems as if my beloved has caught the cooking bug so tomorrow for lunch we are planning on homemade chicken and celery soup. How delicious does that sound? Pretty delicious when most of the meals lately haven't been even close to being able to be labeled "comfort food". &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Usually I am a "&lt;i&gt;little bit of coffee with my cream&lt;/i&gt;" kinda gal so I have been very hesitant to try any sort of &lt;b&gt;black coffee&lt;/b&gt;. This afternoon I treated myself to an Americano and boy did it add some pep to my step! To my surprise I really liked it! This weekend I am going to buy an Italian Espresso maker so I can try and work that into my morning routine. I think it will do wonders for my productivity during the first few hours of the day.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;For lunch I had my delicious shrimp and spinach salad with lemon juice dressing. It really is becoming one of my favorites. Good flavor and easy to pack and take to work. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;For dinner we had one of my favorite things in the world - breakfast for dinner!  We figured out that 5 oz. of egg whites can be substituted as a protein (for 150 calories) so we decided to make omelets.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;I sliced up a beefsteak tomato, weighed it, then took one slice and diced it to add to the egg whites. I tossed in a minced garlic clove and some pepper, sea salt, etc.&amp;nbsp; For my vegetable I used the remaining slices of tomato as my vegetable and added salt and pepper. It was just like I was sitting in a New York diner across from my best friend Jewie while he ate his omelet with spinach and extra feta. It is already showing in my pants especially around my waste. The sacrifice and dedication is paying off. Hurray!&amp;nbsp; ...not so much.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Talk about temptation! I knew today was supposed to be a loading day but I found myself distracted with planning and instead ready to move to phase two. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;On an encouraging note I woke up to a five pound weight loss but that was probably just water weight.  I am looking forward to many more mornings where the scale takes a dip. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;We purchased some magical Stevia - flavored in a variety of options. We picked up Valencia Orange, English Toffee and even Chocolate! We already used the plain liquid Stevia to prepare a vinaigrette dressing for tomorrow's meal #1: Chicken and Strawberry Spinach Salad. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;While preparing I was shocked at the amount of some items. I was honestly imagining teeny tiny portions but I guess it is all about WHAT you choose. Holy MOUNDS of spinach Batman!&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;I am beginning to feel a bit like Desmond or some other member of the Dharma Initiative from LOST: portioning out meals, preparing shots.... Work is my button to push every 180 minutes.  &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Tomorrow however I will not be pushing the button - I have jury duty so lunch poses a unique challenge but I am up to it. I prepared my lunch complete with these great little plastic containers that have a built in cooling pack. Not feeling anything yet - of course.  &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;I said goodbye to one of my favorites today - a Dunkin' Donuts iced coffee lite with hazelnut. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Since it is fat loading day #1 I got a glazed donut too. Normally there would be too much guilt associated with it but today it is more about bidding farewell.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Shot was easier to administer than I thought it would be.
